Besto Beef Bowl

Inspired by our bestie, Abby Moss! 

Ingredients:

For the Sweet Potatoes:

  • 1 Japanese sweet potato, cubed
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • 1 clove garlic, minced
  • 1 tbsp nutritional yeast

For the Beef:

  • ½ lb grass-fed ground beef
  • ½ tsp sea salt, black pepper, garlic powder, and onion powder
  • ¼ tsp red pepper flakes
  • ½ tsp Siete Spicy Taco Seasoning

For the Bowl:

  • ½ cup cottage cheese (@good_culture)
  • 1 handful spinach & microgreens
  • ½ avocado, sliced
  • ¼ cup pickles (@grillos)
  • 1-2 tbsp Besto

For Topping:

  • 1 tbsp hot honey
  • Flaky salt

 

Directions:

 1. Roast Sweet Potatoes: Preheat oven to 400°F. Toss sweet potatoes with olive oil, salt, garlic, and nutritional yeast. Roast 30 min, flipping halfway.

2. Cook Beef: Brown ground beef in a skillet over medium heat. Add seasonings and cook through.

3. Assemble Bowl: Add cottage cheese, spinach, microgreens, avocado, pickles, beef, and sweet potatoes to a bowl.

4. Finish & Serve: Drizzle with hot honey, sprinkle flaky salt, and top with Besto. Enjoy!
