Pesto Sardine Toast

Crisp toast spread with vibrant pesto and topped with tender sardines, finished with a bright hit of lemon and olive oil for a rich, briny bite.

Cook Time: 10 minutes

Servings: 1 person

Ingredients:

  • 1 can of sardines (in olive oil)
  • Bread (sourdough or similar)
  • Besto (2-3 tbsp)
  • Salt
  • Black Pepper
  • Optional: lemon juice/zest, chili flakes, fresh herbs

 

Directions:     

  1. Toast bread: Toast until golden and crisp.
  2. Prep sardines: Drain slightly (leave a little oil), break into large pieces.
  3. Assemble: Spread Besto on toast, layer sardines on top.
  4. Finish: Add salt, pepper, a squeeze of lemon, and chili flakes if using.
