Shrimp Linguine

Cook time: 15-20 minutes

Ingredients:

  • Olive Oil
  • Besto
  • 16 oz of shrimp
  • Salt
  • Pepper
  • Cherry tomatoes
  • Linguine
  • Grated Parmesan Cheese
  • Curly Italian Parsley
  • 2 lemons

Directions: 

  1. In a medium saucepan, drizzle olive oil and bring to a medium-low heat.
  2. Throw in 16 oz of shrimp of choice and sprinkle with salt and pepper.
  3. Separately, cut the cherry tomatoes in halves.
  4. Once the shrimp is pink & cooked, add the cherry tomatoes into the pan. Juice the 2 lemons and pour the lemon juice into the pan.
  5. Add 4-5 spoonfuls of Besto and let the tomatoes, shrimp, and Besto simmer together.
  6. In a separate pot, bring water to boil, and cook linguine until it becomes al dente.
  7. Scoop 1/2 cup of pasta water and add it to the shrimp besto sauce pan.
  8. Once linguine is cooked, add the pasta to the shrimp saucepan and stir it together.
  9. Finely chop curly italian parsley and add it to the linguine pasta.
  10. Add 1/2 cup of grated parmesean cheese and add more Besto the pasta. Stir together.
  11. Garnish with extra parsley and parmesan, if needed.
  12. Enjoy!
