Pesto Summer Caprese
A fresh, no-fuss twist on the classic caprese. Juicy heirloom tomatoes, creamy mozzarella, and a bold drizzle of Besto come together for the perfect summer appetizer. Finished with olive oil, balsamic glaze, and fresh basil — it’s cool, vibrant, and made to impress on hot days.

Ingredients:
- 6–7 large heirloom tomatoes, sliced
- 2 lbs fresh mozzarella, sliced or torn
- ½ cup Besto
- ¼ cup extra virgin olive oil
- 3 tbsp balsamic glaze
- Sea salt, to taste
- Cracked black pepper, to taste
Directions:
- On a large platter or board, layer the tomato and mozzarella slices in an overlapping pattern.
- Drizzle with olive oil and balsamic glaze.
- Spoon Besto generously across the top — in dollops or drizzled.
- Finish with a sprinkle of sea salt and freshly cracked pepper.
- Serve immediately and watch it disappear.
