Pesto Orzo Soup with Bone Broth

Bone broth + Besto = a no-brainer. Warm up with this cozy winter dish that nourishes your body, satisfies your taste buds, and has you sleeping so well.

Cook Time: 30 minutes

Servings: 5 people

Ingredients:

  • 1 tbsp olive oil (plus more for finishing)
  • 12 oz Italian sausage (sweet or spicy), casings removed
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • ¾ cup orzo
  • 1 cup frozen peas
  • Salt, to taste
  • Freshly cracked black pepper
  • Besto, for topping

Directions:     

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up, until browned.
  2. Add onion and garlic and cook until soft and fragrant, about 3–4 minutes.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Stir in orzo and simmer 8–10 minutes, until tender.
  5. Add peas and cook 1–2 minutes, just until bright green.
  6. Season with salt and plenty of black pepper.
  7. Ladle into bowls, drizzle with olive oil, and finish with a generous spoon of Besto pesto and extra pepper.
