“Boy Dinner” Steak, Broccolini & Rice

Ingredients:
- 1 Filet Mignon (6 oz)
- 3 tbsp Besto
- 1 bundle of Broccolini
- 1/2 tsp Garlic Salt (adjust to taste)
- 1/2 tsp Black Pepper (adjust to taste)
- 2 Lemons (juiced)
- 3 tbsp Olive Oil
- 2 tbsp Butter
- 1 cup Jasmine Rice
- 2 cups Chicken Stock or Bone Broth
Directions:

Preheat the oven to 400°F. Line a large baking tray with foil.

Prepare the broccolini: Trim the bottom ends of the broccolini and place it on the prepared baking tray. Drizzle with 2 tablespoons of olive oil, then season with garlic salt and black pepper. Toss to coat evenly.

Roast the broccolini: Place the broccolini in the oven and bake for 15 minutes, or until tender and slightly crispy on the edges. Once done, remove from the oven and set aside.

Prepare the filet mignon: Pat the filet mignon dry with a paper towel. Rub both sides of the steak with olive oil. Season generously with garlic salt and black pepper on both sides.

Bake the steak: Place the seasoned filet mignon in a cast iron pan and transfer it to the oven. Bake for 8 minutes for a medium-rare steak (adjust time for desired doneness).

Sear the steak: Using oven mitts, remove the cast iron pan from the oven. Place the pan on the stovetop over medium-high heat. Add 2 tablespoons of butter and allow it to melt. Sear all four sides of the steak for 1-2 minutes per side, or until a golden-brown crust forms and the steak reaches your desired temperature.

Rest the steak: Transfer the steak to a cutting board and let it rest for a few minutes. Pour any juices from the pan over the steak for extra flavor. Once rested, slice the steak against the grain.

Cook the jasmine rice: Rinse 1 cup of jasmine rice under cold water. In a separate pot, combine the rice with 2 cups of chicken stock or bone broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let the rice simmer for 15 minutes or until fully cooked. Remove from heat and let it sit covered for 5 minutes.

Plate the dish: In a serving bowl or plate, layer the cooked rice, roasted broccolini, and sliced steak. Drizzle with 3 tablespoons of Besto for a burst of flavor.

Serve: Garnish with a squeeze of fresh lemon juice for added brightness and enjoy!
